4 cups fresh ripe strawberries (or your favourite ripe seasonal berry)
2 tsp granulated sugar (approx.)
1 tsp vanilla paste
2 tsp pomegranate juice
2 cups whipping cream
4 cups miniature meringues
Hull and slice the strawberries, transfer them to a bowl and add the sugar – let rest while you whip the cream. Whip the cream with the vanilla paste in a large bowl until thick, but still soft – do not sweeten it, the meringues will provide more than enough sweetness. Roughly crumble in the meringues – you will need chunks for texture as well as a little fine dust – gently fold in to the cream with a rubber spatula.
Take out about half a cup of the chopped strawberries for garnish, but fold the rest of the berries into the meringue cream. Arrange in pretty serving glasses and top each with some of the remaining sliced strawberries to garnish. Serve immediately.
